The cilantro herb (Coriandrum sativum) we are used to seeing on grocery store shelves is commonly referred to as ‘Chinese parsley’, and is actually the leaves and stems of the coriander plant. The pungent tasting leaves are widely used in Mexican, Caribbean, and Asian cooking. Coriander seeds are small and round and have a citrusy, nutty flavor when crushed, and are a popular spice, especially in Indian, Asian, and Mediterranean cuisine.
